Please note: this training should not be accessed on the Labor Day holiday observance.
Course Overview
The Further Processing and Labeling Self-Paced course is an independent 40-hour online training. However, participants will have up to 8 weeks to complete this training.
This course provides a review of complex processing operations and prepares inspection program personnel (IPP) to perform Non-Food Safety Consumer Protection (NFSCP) tasks. IPP will learn essential FSIS policies, regulations, authority, and responsibilities as they relate to these tasks. The training covers labeling, net weight, and other verification activities for fresh and cooked sausage operations, cured meat, poultry products, and added solutions. This course includes exercises and hands-on calculations as well as an On-the-Job Training (OJT) component which is to be completed within three weeks after the training.
Target Audience
CSIs with limited or simple processing experience that may or will temporarily cover a complex processing establishment. CSIs moving from a simple processing assignment to a complex processing assignment. Public Health Veterinarians and Frontline Supervisors with limited processing experience who have oversight responsibility for complex processing assignments in their circuit are also encouraged to participate in this training. Employees who have previously attended the
Further Processing & Labeling course should not enroll in this training.
Course Logistics
Participants will need a government computer and the ability to connect either directly to the USDA network or to the VPN via MiFi, Wi-Fi, or Ethernet. Firefox or Google Chrome are the preferred web browsers. CFL will not provide a training computer or other equipment for this training session.

Following enrollment, participants will receive instructions and a link to the FSIS Training Site.
After completing the training, only CSIs who work in establishments that produce these products must complete Further Processing & Labeling On-the-Job Training (OJT). CSIs will have up to 3 weeks following the training to complete OJT. After completion of the OJT, both the CSI and supervisor should sign the OJT checklist attesting successful completion of OJT. Participants should keep a copy of the OJT checklist for their records. Participants will receive credit for completion of OJT by sending an email to: FSISAgLearn@usda.gov The email should include the participant’s name, the course number, date of completion of OJT and a statement attesting completion of OJT. In addition, the participant should attach the signed checklist to the email.
